Baby Bear takes after her daddy and adores fried chicken. It has become an unofficial ritual to pick up a small batch most Sundays after church and both she and Papa Bear are very discerning about what they consider to be good fried chicken. When my husband saw this recipe for cider-brined fried chicken on TV one day, he couldn’t believe we hadn’t thought of it earlier. You see, Papa Bear and I love to sing the praises of brining. Every year he makes his famous Thanksgiving turkey, I love this recipe from The Pioneer Woman and sometimes we even brine a whole chicken before roasting it. Brining the chicken before frying it made such a difference! The chicken was incredibly moist and full of flavor. We’ve already polished off this batch and I have a feeling we’ll be making another one very soon.
